
Pan Fried Cauliflower With Sun Blush Tomato Butter
The best way to cook up cauliflower is to fry it in a pan. The key is to be liberal with the oil and make sure you get a nice brown crust on the cauliflower, which will give you the perfect balance of crispy and tender.
Ingredients
- 1 medium-sized cauliflower
- 2 oz butter
- 2 cloves garlic
- 2 oz pine nuts
- 3 1/2 oz sun-blush tomatoes
- basil leaves to serve
Instructions
- Trim a medium-sized cauliflower and divide into small florets and rinse. Heat butter in a non-stick pan, add the cauliflower,
- cloves garlic, peeled and sliced, pine nuts and sun-blush tomatoes, finely chopped.
- Cover pan and cook over a low heat for 10 minutes. Raise the heat and stir-fry for a further 2 to 3 minutes until golden.
- Top with a handful of fresh, torn basil leaves to serve
