  • 1/4 pint milk
  • 3 eggs separated
  • 1 oz caster sugar
  • 2 teaspoons coffee essence
  • melted margarine for greasing

  • 2 tablespoons sugar
  • 1 1/2 teaspoons arrowroot

  • Melt the margarine in a fairly large saucepan, sprinkle in the flour and stir over low heat for 1 - 2 minutes until straw-coloured. Remove from the heat and gradually stir in the milk. Return to the heat and simmer, stirring, until very thick and smooth.
