Fried Stuffed Fillet of Plaice (Riga Tel'noe)
Ingredients
- fillets of plaice
- oil
- lemon juice
- dill and parsley
- duxelles of mushrooms
- flour eggwash and breadcrumbs
Instructions
- Marinate fillets of plaice in oil, lemon juice, chopped dill and parsley for 1 hour.
- Spread with duxelles of mushrooms, then roll up and secure with a cocktail stick.
- Pass through flour, eggwash and breadcrumbs, deep fry in oil and serve garnished with picked parsley.
