  • fillets of plaice
  • oil
  • lemon juice
  • dill and parsley
  • duxelles of mushrooms
  • flour eggwash and breadcrumbs


  • Marinate fillets of plaice in oil, lemon juice, chopped dill and parsley for 1 hour.
  • Spread with duxelles of mushrooms, then roll up and secure with a cocktail stick.
  • Pass through flour, eggwash and breadcrumbs, deep fry in oil and serve garnished with picked parsley.
