
Tomato and Onion Salad
Ingredients
- 8 to matoes
- 2 onions
- coriander or parsley sprig to garnish
For the dressing
- 4 tablespoons olive oil
- 1 tablespoon wine vinegar
- pinch of mustard powder
- 1 teaspoon sugar
- 1 tablespoon chopped fresh herbs for example, coriander, parsley, and basil
- salt and pepper
Instructions
- Thinly slice the tomatoes and onions, and arrange in a serving dish.
- To make the dressing, put all the ingredients in a screw-topped jar and shake well. Pour the dressing over the tomato and onion. Garnish with a sprig of coriander or parsley.
Cook's Tip
- Alternative idea: add grated orange rind to the dressing and use finely chopped fresh rosemary instead of the basil. Good with grilled lamb or pork sausages.
