  • 8 to matoes
  • 2 onions
  • coriander or parsley sprig to garnish

For the dressing

  • 4 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • pinch of mustard powder
  • 1 teaspoon sugar
  • 1 tablespoon chopped fresh herbs for example, coriander, parsley, and basil
  • salt and pepper


  • Thinly slice the tomatoes and onions, and arrange in a serving dish.
  • To make the dressing, put all the ingredients in a screw-topped jar and shake well. Pour the dressing over the tomato and onion. Garnish with a sprig of coriander or parsley.

Cook's Tip

  • Alternative idea: add grated orange rind to the dressing and use finely chopped fresh rosemary instead of the basil. Good with grilled lamb or pork sausages.
