  • 3 large Spanish onions
  • 3 large firm tomatoes
  • 4 tbsp French dressing or vinaigrette sauce


  • Parboil the onions for 30 minutes.
  • Leave to cool, then slice as finely as possible.
  • Skin and slice the tomatoes.
  • Arrange the onions and tomatoes in a salad bowl and pour over the dressing.
  • Leave for 1 hour before serving for the flavours to blend.
