  • 2 small endive
  • 4 rashers streaky bacon without rinds
  • salt and pepper
  • 2 tsp white wine vinegar


  • Use only the white hearts of the endive (the outside of the endive can be braised);
  • divide the tufts into pieces.
  • Place in a salad bowl.
  • Chop the bacon finely.
  • Put into a small frying pan and fry until the bacon is crisp and golden.
  • Add the bacon, with its fat, to the endive.
  • Season, add the vinegar and toss well together.
