Endive Salad with Bacon
Ingredients
- 2 small endive
- 4 rashers streaky bacon without rinds
- salt and pepper
- 2 tsp white wine vinegar
Instructions
- Use only the white hearts of the endive (the outside of the endive can be braised);
- divide the tufts into pieces.
- Place in a salad bowl.
- Chop the bacon finely.
- Put into a small frying pan and fry until the bacon is crisp and golden.
- Add the bacon, with its fat, to the endive.
- Season, add the vinegar and toss well together.
