Ingredients
 

  • 5 hard-boiled eggs
  • 1/4 finely shredded lettuce
  • 6 3/4 floz mayonnaise
  • Chosen Fish
  • 10 capers
  • 5 stoned olives
  • 5 cucumber slices
  • 2 to matoes either sliced or in wedges

Instructions

  • Cut the eggs into halves or quarters lengthways and place round side upwards on the shredded lettuce.
  • Coat with the mayonnaise and decorate with thin strips of your chosen fish trellis-fashion, capers, olives, cucumber and tomato.
