
Bacon with Lentils
This is a hearty dish with a lot of protein and fiber to fill you up. The lentils are very filling and the bacon adds a lot of flavor.
Ingredients
- 2 1/4 lb Middle cut bacon hock
- 1 Carrot
- 2 Onions
- 1 Garlic clove
- Bouquet garni
- 8 Peppercorns
- 1 lb Continental lentils
- Salt and pepper
Instructions
- Put bacon joint in a large saucepan and cover with cold water. Soak for 3 hours, changing the water several times.
- Drain the bacon joint and cover with fresh water. Peel and slice the carrot; peel and quarter the onions; peel and halve the garlic. Add to the bacon with the bouquet garni and peppercorns. Bring to the boil, cover and simmer for 45 minutes.
- Remove bouquet garni. Wash and pick over lentils. Add to bacon, cover and cook for a further hour till lentils are tender. Adjust seasoning, then arrange on warmed dish and serve with mustard.
