  • 1 lb potatoes peeled
  • 2 oz butter
  • Salt and pepper to taste
  • 1 medium egg beaten
  • 2 medium egg yolks
  • 1/2 tsp nutmeg grated


  • Boil the potatoes in salted water until cooked.
  • Drain, dry on a clean tea cloth and rub through a sieve.
  • Add the butter, salt, pepper, beaten egg and yolks and nutmeg.
  • Mix thoroughly with a wooden spoon.
  • When required, brush with beaten egg and brown lightly in the oven Gas mark 4, 350°F (180°C).
