Duchess Potatoes
Ingredients
- 1 lb potatoes peeled
- 2 oz butter
- Salt and pepper to taste
- 1 medium egg beaten
- 2 medium egg yolks
- 1/2 tsp nutmeg grated
Instructions
- Boil the potatoes in salted water until cooked.
- Drain, dry on a clean tea cloth and rub through a sieve.
- Add the butter, salt, pepper, beaten egg and yolks and nutmeg.
- Mix thoroughly with a wooden spoon.
- When required, brush with beaten egg and brown lightly in the oven Gas mark 4, 350°F (180°C).
