  • 2 lb potatoes sliced
  • 3 cloves of garlic crushed
  • 1 bayleaf broken into four
  • Salt and black pepper to taste
  • 6 oz streaky bacon
  • Boiling water to cover


  • Layer the thinly sliced potatoes in a suitable ovenproof dish with the garlic, bayleaf and seasoning.
  • Fry the bacon until crisp and break into small pieces.
  • Scatter the bacon and dribble the fat all over the potatoes.
  • Cover with water that is almost, but not quite, boiling.
  • Bake in the oven Gas mark 7, 425°F (220°C) for 1 hour, until the potatoes are tender.
