  • 2 tablespoons oil
  • 4 chicken portions
  • 1 large onion sliced
  • 2 rindless rashers bacon chopped
  • 2 oz mushrooms sliced
  • finely grated rind and juice of 1 orange
  • 11 1/2 oz can sweet corn with peppers
  • salt and pepper


  • Heat the oil, add the chicken portions and cook until brown on all sides. Remove and drain well.
  • Add the onion and bacon to the pan and fry gently until golden brown.
  • Add the mushrooms and fry for a further 2 minutes. Stir in the orange rind and juice and the sweet corn with the liquid from the can. Season well and bring to the boil.
  • Spoon the corn mixture into an ovenproof dish and place the chicken portions on top.
  • Cover with foil or a lid and cook in a moderately hot oven (190°C, 375°F, gas 5) for about 1 hour, or until the chicken is tender.
