Ingredients
 

  • 2 large potatoes scrubbed but not peeled
  • 1 tsp vegetable oil

Instructions

  • Prick the washed potatoes all over with a fork, then coat with a little oil to give a shiny skin.
  • To cook in a conventional oven, heat the oven Gas mark 7, 425°F (220°C).
  • Place in a potato rack and bake for about 1 1/2 hours, or until the insides are tender and the skin crisp.
