Ingredients
 

  • 32 oz Sweet potatoes
  • Salt and pepper
  • 2 oz Butter

Instructions

  • Preheat the oven to 400°F (200°C) Gas 6,
  • Wash the sweet potatoes gently to avoid breaking the skins. Arrange on a greased baking tray and bake in the centre of the oven for about 45 minutes till tender when pierced with a skewer.
  • Arrange the sweet potatoes on a warmed serving dish and cut open along the top. Sprinkle a little salt and pepper into each and top with a knob of butter. Serve immediately.
