
Lyonnaise Potatoes
Ingredients
- 2 lb potatoes
- 2 medium onions
- 4 tbsp olive oil
- salt and freshly ground black pepper
- 1 tbsp parsley chopped
Instructions
- Boil the potatoes in their skins for 15 minutes.
- Peel and cut into even slices.
- Peel the onions and cut into thin rings.
- Heat the oil in a deep frying pan and fry the onions until nicely browned.
- Remove from the pan with a draining spoon and keep warm.
- Add the potatoes to the pan and sprinkle with salt.
- Cook on both sides until golden brown, then add the onions.
- Season with a little more salt and a good grinding of black pepper.
- Turn into a serving dish.
- Garnish with chopped parsley
