Ingredients
 

  • 2 lb potatoes
  • 2 medium onions
  • 4 tbsp olive oil
  • salt and freshly ground black pepper
  • 1 tbsp parsley chopped

Instructions

  • Boil the potatoes in their skins for 15 minutes.
  • Peel and cut into even slices.
  • Peel the onions and cut into thin rings.
  • Heat the oil in a deep frying pan and fry the onions until nicely browned.
  • Remove from the pan with a draining spoon and keep warm.
  • Add the potatoes to the pan and sprinkle with salt.
  • Cook on both sides until golden brown, then add the onions.
  • Season with a little more salt and a good grinding of black pepper.
  • Turn into a serving dish.
  • Garnish with chopped parsley
