This is a traditional English drink, a chilled syllabub made from sweetened whipped cream and lemon or lime juice. It is often served in a wine glass with a little grated nutmeg sprinkled on top.

  • 1 orange juice and rind
  • 1 orange juice and rind
  • 1 lemon juice and rind
  • 4 tablespoons sweet white wine
  • 3 oz caster sugar
  • 1/2 pint double cream whipped


  • Put the wine in a bowl and add the rinds of the orange and lemon. Marinate for at least 1 - 2 hours.
  • Strain through a fine sieve, reserve a few strands of rind for decoration.
  • Slowly fold the liquid and sugar into the cream. Spoon into six glass serving dishes.
  • Decorate with the citrus rind and chill for 1 - 2 hours before serving.
  • Brandy snaps or sweet biscuits can be served with this Syllabub.
