Chicken and Grape Tarts
Ingredients
- 7 oz wholewheat flour
- 1 tsp salt
- 1/2 tsp baking powder
- 2 small eggs
- 3 1/2 oz butter
- 14 oz cooked chicken
- 1/2 tsp each salt and freshly ground white pepper
- 18 oz green grapes
- 8 gherkins
- 4 oz cream cheese
- 6 tbsp soured cream
- 2 tbsp tomato puree/paste
- 1/4 tsp dried basil
- 18 leaves fresh basil
- butter to grease 6 tins 8 cm (3 1/2 in) across
Instructions
- Combine flour with 1/2 tsp salt and baking powder, make well in centre.
- Break eggs into well and put butter in dabs around edge.
- Knead all ingredients together quickly.
- Finely chop chicken and season with 1/2 tsp salt and pepper.
- Halve and seed grapes. Finely chop gherkins.
- Using a wire whisk, combine cream cheese, soured cream, tomato puree and dried basil. Add chopped gherkins, grapes and chopped chicken.
- Preheat oven to 180°C (350°F) gas mark 4. Grease tart tins with butter.
- Roll out pastry, line tins and bake in centre of oven for 15 minutes.
- Leave pastry shells to cool before filling with chicken mixture and garnishing with basil leaves
