Wheat Free Kirkintilloch Slices
Ingredients
- 1 1/2 oz butter
- 1 1/2 floz oil or 3 oz dairy-free margarine
- 2 oz Muscovado or Barbados sugar
- 3 oz barley flour
- 1 teaspoon baking powder
- 2 eggs
- 5 oz chopped dates
- 2 oz sultanas
- 2 oz chopped walnuts
Instructions
- Cream the butter, oil and sugar. Mix the flour and baking powder.
- Beat one egg and half of the flour into the butter mixture, then the other egg and the rest of the flour. Mix in the chopped fruit and the walnuts.
- Put into a greased Swiss roll tin and bake for 20 minutes at 375°F (190°C) gas mark 5. When cold, cut into slices.
