Ingredients
 

  • 1 1/2 oz butter
  • 1 1/2 floz oil or 3 oz dairy-free margarine
  • 2 oz Muscovado or Barbados sugar
  • 3 oz barley flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 5 oz chopped dates
  • 2 oz sultanas
  • 2 oz chopped walnuts

Instructions

  • Cream the butter, oil and sugar. Mix the flour and baking powder.
  • Beat one egg and half of the flour into the butter mixture, then the other egg and the rest of the flour. Mix in the chopped fruit and the walnuts.
  • Put into a greased Swiss roll tin and bake for 20 minutes at 375°F (190°C) gas mark 5. When cold, cut into slices.
