Tutti Frutti Cake
Ingredients
- 4 oz butter
- 4 oz soft brown sugar
- 2 eggs beaten
- 3 oz chopped mixed glace fruits
- 5 oz natural yogurt
- 3 tablespoons fresh milk
- 6 oz self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon grated nutmeg
- glace icing and glace cherries to decorate
Instructions
- Cream together the butter and sugar until light and fluffy. Gradually beat in the eggs. Stir in the fruit, yogurt and milk.
- Fold in the flour, bicarbonate of soda and nutmeg. Spoon into a greased and base lined 1.7 litre (3 pint) ring mould. Cover with absorbent kitchen paper and cook on HIGH for 10 minutes.
- Leave to stand for 5 minutes before turning out. When cool decorate with glace icing and cherries.
- Timings are for a 600 watt microwave oven.
