  • 4 oz butter
  • 4 oz soft brown sugar
  • 2 eggs beaten
  • 3 oz chopped mixed glace fruits
  • 5 oz natural yogurt
  • 3 tablespoons fresh milk
  • 6 oz self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon grated nutmeg
  • glace icing and glace cherries to decorate


  • Cream together the butter and sugar until light and fluffy. Gradually beat in the eggs. Stir in the fruit, yogurt and milk.
  • Fold in the flour, bicarbonate of soda and nutmeg. Spoon into a greased and base lined 1.7 litre (3 pint) ring mould. Cover with absorbent kitchen paper and cook on HIGH for 10 minutes.
  • Leave to stand for 5 minutes before turning out. When cool decorate with glace icing and cherries.
  • Timings are for a 600 watt microwave oven.
