Stewed Red Cabbage
Ingredients
- 1 small red cabbage 2.2 lb approx.
- 1 slice of ham 2 oz
- 4 tsp butter or margarine
- 2 cups beef stock
- 4 1/3 floz vinegar
- 1 tbsp granulated sugar
- salt and pepper
Instructions
- Prepare and shred the cabbage finely and dice the ham.
- Put the cabbage, ham, fat, half the stock, and the vinegar in a heavy based pan.
- Cover, and cook .over gentle heat, stirring from time to time, for 1 1/2 hours.
- Add the rest of the stock and the sugar and seasoning.
- Increase the heat and cook for about another 15 minutes, stirring frequently, until almost all the liquid has evaporated.
- Serve at once.
