This is a good accompaniment to strongly flavored meats, turkey, or even goose. Always cook the cabbage in a stainless-steel or enamel pot; aluminum will react with the acid in the vinegar and the sour salt.

Ingredients
 

  • 1 red cabbage shredded
  • 3/4 cup water
  • 1/2 teaspoon salt
  • 2 large apples peeled, cored, and diced
  • 1/2 cup golden raisins
  • 1/2 cup wine vinegar
  • 2 tablespoons brown sugar
  • dash of sour salt citric acid

Instructions

  • Put the cabbage, water, and salt in a large pot. Bring to a boil over high heat, then cover the pot and cook the cabbage for 15 minutes.
  • Add the remaining ingredients and cook until the cabbage is tender, about 20 minutes.
