A classic recipe for red cabbage with pears and cloves, perfect to go with roasted duck.

Ingredients
 

  • 1 medium red cabbage
  • 2 British pears
  • 6 whole cloves
  • 2 tbsp red wine vinegar
  • salt and freshly ground black pepper
  • 1 oz butter
  • 1 tsp clear honey

Instructions

  • Cut the cabbage in half and remove the centre core carefully with a sharp knife, then thinly shred the cabbage and place into a pan.
  • Peel the pears and grate coarsely, add to the cabbage with the cloves, red wine vinegar, salt and pepper, butter and hone)
  • Cover with a tight-fitting lid and cook over a low heat for 30 minutes, stirring from time to time.
