Red Cabbage with Apples
Ingredients
- 2.2 lb red cabbage approx
- 1 medium sized onion
- 10 oz cooking tart apples (approx)
- 1 oz butter or margarine
- 1 tbsp golden syrup substitute light corn syrup
- juice of 1/2 lemon
- 2 tbsp vinegar
- salt and pepper
Instructions
- Prepare and shred the red cabbage finely.
- Skin and chop the onion finely and peel, core, and slice the apples.
- Melt the fat in a saucepan, add the onion and fry gently for 5 minutes.
- Add the cabbage, apples, and syrup and cook over very gentle heat for 10 minutes, shaking the pan frequently.
- Add the lemon juice, vinegar, and seasoning.
- Cover and simmer gently for 1 1/2 hours, stirring occasionally. Season again if required before serving.
