Ingredients
 

  • 2.2 lb red cabbage approx
  • 1 medium sized onion
  • 10 oz cooking tart apples (approx)
  • 1 oz butter or margarine
  • 1 tbsp golden syrup substitute light corn syrup
  • juice of 1/2 lemon
  • 2 tbsp vinegar
  • salt and pepper

Instructions

  • Prepare and shred the red cabbage finely.
  • Skin and chop the onion finely and peel, core, and slice the apples.
  • Melt the fat in a saucepan, add the onion and fry gently for 5 minutes.
  • Add the cabbage, apples, and syrup and cook over very gentle heat for 10 minutes, shaking the pan frequently.
  • Add the lemon juice, vinegar, and seasoning.
  • Cover and simmer gently for 1 1/2 hours, stirring occasionally. Season again if required before serving.
