
Kachumbali Salad
Traditional Katchumbali is made by very finely chopping the onions, tomatoes, cucumber and carrot. This produces a very moist, sauce-like mixture, which is good served inside chapatis, and eaten as a snack.
Ingredients
- 2 red onions
- 4 tomatoes
- 1 green chilli
- 1/2 cucumber
- 1 carrot
- juice of 1 lemon
- salt and freshly ground black pepper
Instructions
- Slice the onions and tomatoes very thinly and place in a bowl.
- Slice the chilli lengthways, discard the seeds, then chop very finely. Peel and slice the cucumber and carrot and add to the onions and tomatoes.
- Squeeze the lemon juice over the salad. Season 'with salt and freshly ground black pepper and toss together to mix. Serve as an accompaniment, salad or relish.
