Cheese and Sausage Salad
Cheese and Sausage Salad is a great lunch time meal. This easy to make salad is perfect for any occasion.
Ingredients
- 8 oz Emmental cheese
- 12 oz garlic sausage
- 1 apple
- 7 oz gherkins
- 7 oz can sweet corn
- 1 onion
- 1 clove garlic
- 2 tablespoons wine vinegar
- salt and freshly milled white pepper
- 1 teaspoon mild mustard
- generous pinch of cayenne
- 3 tablespoons oil
- chives to garnish
Instructions
- Cut the cheese into very fine strips. Skin and thinly slice the sausage. Wash, dry and quarter the apple and remove the core.
- Finely dice the apple. Dice the gherkins. Drain the sweetcorn, then finely dice the onion.
- Finely chop the garlic and mix it with the diced onion, wine vinegar, salt and pepper, the mustard, paprika and oil.
- Mix all the salad ingredients carefully into the dressing. Wash, dry and chop the chives and sprinkle them over the salad before serving.
- Serve with: fresh farmhouse bread or soda bread.
