Cheese and Sausage Salad is a great lunch time meal. This easy to make salad is perfect for any occasion.

  • 8 oz Emmental cheese
  • 12 oz garlic sausage
  • 1 apple
  • 7 oz gherkins
  • 7 oz can sweet corn
  • 1 onion
  • 1 clove garlic
  • 2 tablespoons wine vinegar
  • salt and freshly milled white pepper
  • 1 teaspoon mild mustard
  • generous pinch of cayenne
  • 3 tablespoons oil
  • chives to garnish


  • Cut the cheese into very fine strips. Skin and thinly slice the sausage. Wash, dry and quarter the apple and remove the core.
  • Finely dice the apple. Dice the gherkins. Drain the sweetcorn, then finely dice the onion.
  • Finely chop the garlic and mix it with the diced onion, wine vinegar, salt and pepper, the mustard, paprika and oil.
  • Mix all the salad ingredients carefully into the dressing. Wash, dry and chop the chives and sprinkle them over the salad before serving.
  • Serve with: fresh farmhouse bread or soda bread.
