
Baked Fruit Salad
Ingredients
- 1 grapefruit
- 2 oranges
- 1 eating apple sliced
- 8 dried apricot halves
- 1/2 pint unsweetened orange juice
Instructions
- Slice the grapefruit and oranges, leaving on the peel. Put the grapefruit, orange and apple slices in a casserole with the apricots. Use the ends of the oranges and grapefruit to cover the tops.
- Pour in the orange juice and cover with a lid or foil. Bake in the oven for about 20 minutes until all the fruit is soft. Discard the fruit ends. Serve hot or cold.
- Served hot, this nutritious dish is a healthy way to start breakfast on a cold morning. It is equally good served cold.
