
Cheese and Fruit Salad
This fruit salad is a great way to use up that leftover cheese from the fridge. It's a delicious and healthy side dish for any meal or potluck.
Ingredients
- small head of Chinese leaves shredded
- 8 oz can pineapple chunks
- 4 oz cottage cheese
- 4 oz Cheddar cheese diced
- 4 oz cooked ham diced
- salt and pepper
- 1 avocado
- 1 tablespoon lemon juice
Instructions
- Arrange the Chinese leaves in the bottom of a serving dish. Drain the pineapple chunks. Mix with the cottage cheese, Cheddar and ham. Season well and spoon the mixture on top of the leaves.
- Halve the avocado. Scoop out the stone, then peel and thinly slice. Sprinkle with lemon juice and arrange the slices on top of the cheese mixture. Chill before serving.
