The Ugli fruit is a cross between a tangerine and a grapefruit. When combined with the pink flesh of the ruby grapefruit, and the red flesh of the blood orange, the Ugli fruit makes a colourful dessert.

  • 1 Ugli fruit
  • 1 ruby grapefruit
  • 3 blood oranges Maltese oranges
  • 1 lime

For the Dressing

  • 6 tablespoons clear honey
  • 2 level tablespoons crystalised orange peel chopped
  • 6 green cardamom pods seeds crushed to powder
  • 2 tablespoons rose water


  • Place all the ingredients for the dressing in a small saucepan and stir together over a moderate heat for 2 minutes.
  • Draw from the heat and pour into a china dish. Leave to cool.
  • Peel all the fruit and neatly trim away the pith using a sharp knife. Cut each fruit lengthways into 4 pieces and slice each piece thinly into segments.
  • Arrange over 4 dessert plates in fan shapes, using the largest of the fruits at the top of the fan and the smallest towards the centre. Add 1 piece of lime at the base.
  • Pour the honey dressing over the fruit and leave to chill in the refrigerator for 30 minutes.
