
Cheese and fruit cocktail
This cheese and fruit cocktail recipe is a great appetizer for any party. Serve it with your favorite crackers.
Ingredients
- 2 dessert apples
- lemon juice
- 2 celery sticks chopped
- 2 oz Edam cheese diced
- 4 oz grapes halved and seeded
- 1/2 lettuce shredded
- grated rind and juice of 1 orange
- 2 tablespoons natural low-fat yogurt
Instructions
- Chop the apples and put in a bowl and sprinkle with lemon juice. Add the celery, cheese and grapes and mix together. Arrange a little shredded lettuce in the base of four dishes. Pile the cheese and fruit mixture on top.
- Mix the orange rind, juice and yogurt together, then pour a little over each cocktail. Serve chilled.
- Always wash fresh fruit thoroughly in cold water. This is particularly necessary when using unpeeled fruit such as apples and grapes. A crisp variety of dessert apple will give a pleasant contrasting texture to the cheese.
