
Stir Fried Vegetables with Oyster Sauce
This delicious vegetable dish is eaten all over the Far East. The oyster sauce gives it a special richness and can be found in almost any large supermarket. The vegetables should still be crisp when served.
Ingredients
- 2 carrots
- 8 oz broccoli
- 1 red pepper
- 8 oz green beans
- 2 oz spring onions
- 2 cloves garlic
- 2 tablespoons vegetable oil
- 4 tablespoons sesame seed oil
- 1 small green chilli optional
- 3 tablespoons oyster sauce
- 6 oz bean sprouts
- 1 tablespoon light soy sauce
- 1 tablespoon caster sugar
- Juice of 1 lime
- Salt and freshly ground white pepper
Instructions
- Peel and slice the carrots into thin rounds. Divide the broccoli into florets and coarsely chop the stems. De-seed and core the red pepper and cut it into matchsticks.
- Top and tail the green beans and cut them into thirds. Trim and slice the spring onions and peel and chop the garlic.
- Heat the vegetable oil and 2 tablespoons of the sesame seed oil in a wok or large frying pan. Add the garlic and stir for about 1 minute.
- Then stir in all the remaining vegetables except the bean sprouts and add the oyster sauce. Stir-fry for 3-4 minutes.
- Add the remaining ingredients and stir-fry for another 2 minutes. Sprinkle the lime juice over the vegetables, season and serve immediately.
