This delicious vegetable dish is eaten all over the Far East. The oyster sauce gives it a special richness and can be found in almost any large supermarket. The vegetables should still be crisp when served.

Ingredients
 

  • 2 carrots
  • 8 oz broccoli
  • 1 red pepper
  • 8 oz green beans
  • 2 oz spring onions
  • 2 cloves garlic
  • 2 tablespoons vegetable oil
  • 4 tablespoons sesame seed oil
  • 1 small green chilli optional
  • 3 tablespoons oyster sauce
  • 6 oz bean sprouts
  • 1 tablespoon light soy sauce
  • 1 tablespoon caster sugar
  • Juice of 1 lime
  • Salt and freshly ground white pepper

Instructions

  • Peel and slice the carrots into thin rounds. Divide the broccoli into florets and coarsely chop the stems. De-seed and core the red pepper and cut it into matchsticks.
  • Top and tail the green beans and cut them into thirds. Trim and slice the spring onions and peel and chop the garlic.
  • Heat the vegetable oil and 2 tablespoons of the sesame seed oil in a wok or large frying pan. Add the garlic and stir for about 1 minute.
  • Then stir in all the remaining vegetables except the bean sprouts and add the oyster sauce. Stir-fry for 3-4 minutes.
  • Add the remaining ingredients and stir-fry for another 2 minutes. Sprinkle the lime juice over the vegetables, season and serve immediately.
