Ingredients
- 1 1/4 lb cod fillet skinned
- 1 teaspoon salt
- 1 tablespoon oil
- 2 rindless rashers back bacon shredded
- 2 oz frozen peas cooked
- 2 oz frozen sweetcorn cooked
- 6 tablespoons chicken stock or water
- 2 teaspoons dry sherry
- 2 teaspoons soy sauce
- 1 teaspoon sugar
- 1 teaspoon cornflour blended with 1 teaspoon water
- spring onion flowers to garnish
Instructions
- Cut the cod fillet into 2.5 cm/1 inch wide strips, sprinkle with salt, leave for 15 minutes.
- Heat the oil in a frying pan, add the fish and bacon and stir-fry for 3 minutes. Add the remaining ingredients, except the blended cornflour, and bring to the boil.
- Stir in the blended cornflour and cook for 1 minute.
- Garnish the finished dish with the spring onion flowers and serve immediately.
- Stir-frying requires less fat or oil than other types of frying. It also reduces the cooking time to the minimum. The food retains colour and texture.
