Baked Soya Beans and Vegetables
Ingredients
- 1 medium sized onion
- 1/2 green pepper
- 1 medium sized carrot
- 1 stick of celery
- 2 tbsp margarine
- 1 lb cooked soya beans
- 2 tbsp molasses
- 3 tbsp chopped parsley
- 1/4 tsp dried thyme
- 1/4 tsp dried savory
- salt and pepper
- 2 1/2 floz tomato juice
- medium oatmeal
Instructions
- Skin the onion and chop it finely with the pepper.
- Grate the carrot coarsely, and slice the celery thinly.
- Grease a medium sized ovenproof casserole with a little of the margarine.
- Mix together the vegetables and soya beans.
- Warm the molasses and stir it into the vegetables.
- Add the herbs and salt and pepper to taste.
- Turn the mixture into the dish and pour over 50 ml tomato juice.
- Sprinkle thickly with oatmeal.
- Melt the remaining margarine and sprinkle it over the oatmeal.
- Cover the dish, and bake in a moderate oven, 180°C, Gas 4 for 45 minutes.
- Pour over a little extra tomato juice if the contents seem dry during this time.
- Remove the lid and bake for a further 15 minutes.
- Serve hot from the dish.
