Spinach and Turnip (Sagg)
Ingredients
- 3 1/3 lb spinach
- 8 oz diced turnip
- 3 1/2 oz chopped onion
- 1 tsp mustard seeds
- 4 tsp ghee
- 1 tsp grated ginger
- 1/4 tsp chilli powder
- 1/2 tsp turmeric
- 1/4 tsp garam masala
- 2 tbsp lemon juice
- salt
Instructions
- Place the spinach in a deep pan, add a little water, season with salt, cover with a lid and boil for 5 minutes until tender. Drain well, coarsely chop and retain.
- Boil the diced turnips in salted water until cooked.
- Lightly fry the mustard seeds in ghee, then add the chopped onion, grated ginger, chilli powder and turmeric.
- Add the chopped spinach and drained turnips and cook for a further 3 - 4 minutes.
- Serve sprinkled with garam masala and the lemon juice.
