
Spicy Meat Fritters
Ingredients
- 1 lb potatoes boiled and drained
- 1 lb lean minced beef
- 1 onion quartered
- 1 bunch spring onions chopped
- 3 garlic cloves crushed
- 1 tsp ground nutmeg
- 1 tbsp coriander seeds dry-fried and ground
- 2 tsp cumin seeds dry-fried and ground
- 4 eggs beaten
- oil for shallow-frying
- salt and freshly ground black pepper
Instructions
- While the potatoes are still warm, mash them in the pan until they are well broken up. Add to the minced beef and mix well together.
- Finely chop the onion, spring onions and garlic. Add to the meat with the ground nutmeg, coriander and cumin. Stir in enough beaten egg to give a soft consistency which can be formed into fritters. Season to taste.
- Heat the oil in a large frying pan. Using a dessertspoon, scoop out 6— 8 oval-shaped fritters and drop then into the hot oil. Allow to set, so that they keep their shape (this will take about 3 minutes) and then turn over and cook for a further minute.
- Drain well on kitchen paper and keep warm while cooking the remaining fritters.
