This recipe makes a great side dish or appetizer. Courgette fritters are a delicious way to sneak in veggies, and can be made as a vegan-friendly dish.

  • 1/2 lb courgettes zucchini, grated
  • 3 tbsp flour
  • 2 eggs
  • 2 tsp chopped fresh sage
  • 1 clove garlic crushed
  • Salt and pepper
  • 5 tbsp oil


  • Put the courgettes, flour, eggs, sage and garlic in a bowl and season with salt and pepper.
  • Heat the oil in a pan and drop 15 ml (1 tbsp) of the mixture for each fritter into the hot oil.
  • Cook until golden on both sides, drain on kitchen paper and keep warm until ready to serve.
