Courgette Fritters (Fritelle di Zucchine)
This recipe makes a great side dish or appetizer. Courgette fritters are a delicious way to sneak in veggies, and can be made as a vegan-friendly dish.
Ingredients
- 1/2 lb courgettes zucchini, grated
- 3 tbsp flour
- 2 eggs
- 2 tsp chopped fresh sage
- 1 clove garlic crushed
- Salt and pepper
- 5 tbsp oil
Instructions
- Put the courgettes, flour, eggs, sage and garlic in a bowl and season with salt and pepper.
- Heat the oil in a pan and drop 15 ml (1 tbsp) of the mixture for each fritter into the hot oil.
- Cook until golden on both sides, drain on kitchen paper and keep warm until ready to serve.
