
Thia Sweetcorn Fritters (Pergedel Jagung)
These fritters are scrumptious, light, and go well with the spicy dipping sauce. A perfect side dish for any meal of the day.
Ingredients
- 9 oz drained sweetcorn kernels
- 2 oz chopped onion
- 2 chopped cloves of garlic
- 1 oz chopped spring onions
- 1 tsp ground coriander
- 1/2 tsp chilli powder
- 3 1/2 oz rice flour
- 1 tsp baking powder
- 2 beaten eggs
Instructions
- Mix together 250 g drained sweetcorn kernels, 50 g chopped onion, 2 chopped cloves of garlic, 25 g chopped spring onions, 1 tsp ground coriander, 1/2 tsp chilli powder, 100 g rice flour, 1 tsp baking powder and 2 beaten eggs to form a dropping consistency.
- Fry spoonfuls of the mixture in oil until golden brown.
