Savoury Potatoes with Tomatoes (Alu Tariwale)
Ingredients
- 2.2 lb potatoes
- 2 tsp cumin seeds
- 2 tsp mustard seeds
- 5 1/2 floz oil or ghee
- 1 tsp coriander seeds
- 1 tsp ground turmeric
- 1 tsp chilli powder
- 1 lb tomato concass©e
- 5 floz water
- chopped onion
Instructions
- Boil potatoes in their skins until half cooked; skin and cut into 5 mm slices. Fry 2 tsp each of cumin seeds and mustard seeds in 5 1/2 floz oil or ghee until they burst, then add 1 tsp each of coriander seeds, ground turmeric and chilli powder.
- Add 1 lb tomato concassée and 5 floz water, simmer for 5 minutes, then add the sliced potatoes.
- Season with salt and simmer until cooked and all the liquid has evaporated.
- Serve sprinkled with chopped onion.
