  • 1 lb cooking apples
  • 8 floz water
  • 2 tablespoons sugar
  • 4 oz rindless streaky bacon
  • 2 large onions
  • salt and freshly milled white pepper
  • 12 oz black pudding or 4 pork sausages

  • Peel the potatoes and boil them in a covered saucepan of salted water over a low heat for 20-25 minutes. Peel, quarter, core and thinly slice the apples.
  • Add the apple to the water and sugar in a saucepan, cover the pan and boil gently for 15 minutes, until the apples are just tender.
  • Drain the potatoes, evaporate the moisture and mash them. Whisk the apple and its juice into the potatoes. Dice and fry the bacon until crisp.
