
Sausage with Potato and Apple Mash
Ingredients
- 2 lb floury potatoes
- 1 teaspoon salt
- 1 lb cooking apples
- 8 floz water
- 2 tablespoons sugar
- 4 oz rindless streaky bacon
- 2 large onions
- salt and freshly milled white pepper
- 12 oz black pudding or 4 pork sausages
Instructions
- Peel the potatoes and boil them in a covered saucepan of salted water over a low heat for 20-25 minutes. Peel, quarter, core and thinly slice the apples.
- Add the apple to the water and sugar in a saucepan, cover the pan and boil gently for 15 minutes, until the apples are just tender.
- Drain the potatoes, evaporate the moisture and mash them. Whisk the apple and its juice into the potatoes. Dice and fry the bacon until crisp.
- Cut the onions into rings and brown them in the bacon fat. Stir the bacon and onion mixture into the potato and apple mixture and season to taste.
- Cut the black pudding into 8 thick slices. Fry the black pudding or pork sausages in the bacon fat until brown and crisp and arrange over the potato mixture.
