Potato Apple Cake
Ingredients
- 2 cups self raising self rising flour
- 1/2 tsp powdered cinnamon
- 3/4 cup butter
- 4 oz cooked sieved potato
- 8 Tbls caster sugar superfine granulated
- 2 large cooking tart apples
- 2 medium eggs beaten
Instructions
- Sift together the flour and cinnamon and rub in the butter.
- Add the sugar, potato and finely sliced apple.
- Stir in the beaten eggs to make a fairly soft consistency using a little milk if necessary.
- Place the mixture in a well greased 20 cm (8 in) cake tin and bake at Gas mark 5, 375°F (190°C) for 1 1/4 hours.
- Allow to cool slightly in the tin, remove and dredge with icing sugar.
