Peas and Chorizo Sausage (Ervilhas Portuguesa)
This recipe will show you how to make a traditional Portuguese chorizo and peas dish.
Ingredients
- 3 1/2 oz chopped onion
- 2 cloves of chopped garlic
- 1 3/4 floz oil
- 9 oz diced tomato flesh
- sprig of thyme
- chopped parsley
- 3 1/2 lb boiled and drained peas
- fried eggs
- sliced chorizo sausage
- strips of smoked ham
Instructions
- Sauté 100 g chopped onion and 2 cloves of chopped garlic in 50 ml oil; add 250 g diced tomato flesh, a sprig of thyme and chopped parsley.
- Serve 1.5 kg boiled and drained peas with fried eggs on top, garnish with sliced chorizo sausage and strips of smoked ham and surround with the tomato mixture.
