  • 3 1/2 oz chopped onion
  • 2 cloves of chopped garlic
  • 1 3/4 floz oil
  • 9 oz diced tomato flesh
  • sprig of thyme
  • chopped parsley
  • 3 1/2 lb boiled and drained peas
  • fried eggs
  • sliced chorizo sausage
  • strips of smoked ham


  • Sauté 100 g chopped onion and 2 cloves of chopped garlic in 50 ml oil; add 250 g diced tomato flesh, a sprig of thyme and chopped parsley.
  • Serve 1.5 kg boiled and drained peas with fried eggs on top, garnish with sliced chorizo sausage and strips of smoked ham and surround with the tomato mixture.
