This quick and easy meal is perfect for busy weeknights. Recipe includes spaghetti with spicy sausage balls, onion, garlic, crushed tomatoes, oregano, salt and pepper.

  • 1 tbsp sunflower oil
  • 1 onion chopped
  • 2 cloves garlic finely chopped
  • 1 red chilli deseeded and finely chopped
  • 2 tbsp sweet pickle
  • 3 tbsp fresh white breadcrumbs
  • 1 oz pack pork sausage meat
  • 1 oz can chopped tomatoes with herbs
  • 10 floz apple juice
  • 2 tbsp tomato purée
  • 10 1/2 oz spaghetti
  • chopped fresh parsley optional


  • Heat the oil in a frying pan and add the onion, garlic and chilli. Fry over a medium heat, stirring, until the onion has softened.
  • Remove from the heat and tip into a large mixing bowl, adding the sweet pickle, breadcrumbs and sausage meat With clean hands, mash the mixture together
  • Tear off into walnut-sized lumps and shape into roughly 20 balls between the palms of your hands.
  • Heat a large frying pan, add the balls (they don't need any extra oil) and cook, stirring, over a high heat to seal all over Reduce
  • the heat, then add the chopped tomatoes, apple juice and tomato puree. Simmer gently, stirring occasionally, for 20 minutes, until the sausage balls are cooked through.
  • Meanwhile, bring a pan of salted water to the boil and cook the pasta according to the packet instructions Drain well, pile into pasta bowls and top with the sausage balls
