This stock is made from basic pantry ingredients and it's very inexpensive.

  • 2 large potatoes
  • 3 large carrots
  • 2 onions
  • 3 stalks celery
  • 2 pint cold water
  • salt and pepper to taste
  • 1 bunch of mixed herbs


  • Wash but do not peel the potatoes and carrots, roughly chop.
  • Peel and roughly chop the onions.
  • De string and chop the celery, using tops also.
  • Place in a suitable pan and pour over the water.
  • Season with salt and pepper and add the mixed herbs.
  • Bring to the boil gently and allow to simmer until the vegetables are well cooked.
  • Depending on how you wish to use the stock, either clear or opaque, strain off the liquid, or rub the ingredients through a sieve and add to the liquid.
