Potato Stock
This stock is made from basic pantry ingredients and it's very inexpensive.
Ingredients
- 2 large potatoes
- 3 large carrots
- 2 onions
- 3 stalks celery
- 2 pint cold water
- salt and pepper to taste
- 1 bunch of mixed herbs
Instructions
- Wash but do not peel the potatoes and carrots, roughly chop.
- Peel and roughly chop the onions.
- De string and chop the celery, using tops also.
- Place in a suitable pan and pour over the water.
- Season with salt and pepper and add the mixed herbs.
- Bring to the boil gently and allow to simmer until the vegetables are well cooked.
- Depending on how you wish to use the stock, either clear or opaque, strain off the liquid, or rub the ingredients through a sieve and add to the liquid.
