White Meat Stock
This is the best white meat stock recipe out there. It's easy to make and it doesn't require any ingredients that are difficult to find.
Ingredients
- 4 lb veal sliced
- 6 small carrots
- 3 leeks cut into chunks
- 1 celery stalk cut into chunks
- 1 bouquet garni
- 5 pints cold water
Instructions
- Place all the ingredients in a heavy-based saucepan.
- Bring to the boil and skim. Cover, reduce heat and simmer for approximately 4 hours.
- Skim frequently and replenish with boiling water if necessary.
- Strain, skim off fat, then strain again.
- Adjust seasoning if necessary.
