Potato Shortcrust Pastry
Potato Shortcrust Pastry is a quick and easy pastry that can be used as a base for a variety of dishes.
Ingredients
- 1 cup self-raising flour
- 2 oz potatoes peeled, cooked and riced
- 1 level tsp salt
- 1/3 cup butter
- cold water to bind
Instructions
- Mix all dry ingredients together and rub in the butter.
- Add sufficient water to bind, cover with cling film and allow to stand for at least 45 minutes.
- Roll out and use for all pies, flans and quiches.
