Gluten Free Blanched Salad
This salad is gluten free and nut-free. Perfect for a potluck, picnic or back-to-school lunch box.
Ingredients
- 3 oz cauliflower leaves diced
- 1 small cauliflower cut into sprigs
- 1/2 lb white cabbage
- 1 bunch watercress
- 1 lettuce
- 1/2 head celery
- 1/2 bunch spring onions
- 1/2 lb carrots finely sliced or diced
- 6 oz radish red or mooli
- 3/4 lb Chinese leaves
- 3 oz broccoli cut in sprigs
Instructions
- Each vegetable should be blanched separately by plunging into unsalted boiling water for 1-4 minutes, in small batches.
- Mix the vegetables in a bowl and serve with a separate dressing.
