Chorizo Sauce
Chorizo is a spicy Spanish sausage often made from pork and served as a tapa. In this recipe, we use it as a base for a smooth, flavorful sauce that's perfect with fish, eggs or potatoes.
Ingredients
- 1 oz chorizo sausage thinly sliced
- 1 tbsp mountain pepper
- 1/2 pint single cream
- 1 oz pecorino grated
Instructions
- Fry the chorizo for 2 minutes in a frying pan until golden.
- Add the moutain pepper and fry for 10 seconds. Add the cream, bring to the boil.
- Add the cheese and simmer for 2 - 3 minutes then remove from the heat.
- Serve immediately. serve with clams
