Peanut, Bacon and Avocado Sandwich
Ingredients
- 8 thick slices of wholemeal bread buttered
- 2 tbsp crunchy peanut butter
- 2 tbsp mayonnaise
- 8 rashers bacon grilled
- 1 ripe avocado thinly sliced and sprinkled with lemon juice
- shredded iceberg lettuce
- freshly ground black pepper
Instructions
- Spread the peanut butter on four slices of bread and mayonnaise on the other four.
- Place the bacon, avocado, lettuce and pepper on the peanut butter spread slices and top with the mayonnaise spread slices. Cut each round into four.
