Ingredients
 

  • 5 oz wholemeal flour
  • 1 oz rice flour
  • 1 oz molasses sugar
  • 4 oz polyunsaturated margarine
  • 3 tbsp honey
  • 4 oz finely chopped unsalted peanuts

Instructions

  • Mix the flours and sugar together in a bowl. Rub the margarine into the mixture and knead to form a soft dough.
  • Roll out to a 12 by 6 inch (30 by 15 cm) rectangle.
  • Mix together the honey and finely chopped unsalted peanuts.
  • Spread over the shortbread and roll up. Slice at 1/4 inch (5 mm) intervals.
  • Bake for 30 minutes at Mark 3 (160°C) 325°F.
