Peanut Shortbread
Ingredients
- 5 oz wholemeal flour
- 1 oz rice flour
- 1 oz molasses sugar
- 4 oz polyunsaturated margarine
- 3 tbsp honey
- 4 oz finely chopped unsalted peanuts
Instructions
- Mix the flours and sugar together in a bowl. Rub the margarine into the mixture and knead to form a soft dough.
- Roll out to a 12 by 6 inch (30 by 15 cm) rectangle.
- Mix together the honey and finely chopped unsalted peanuts.
- Spread over the shortbread and roll up. Slice at 1/4 inch (5 mm) intervals.
- Bake for 30 minutes at Mark 3 (160°C) 325°F.
