Parmentier Potatoes
Ingredients
- 1 1/2 lb potatoes
- 1 cup butter
- 1 tbsp parsley chopped for garnish
- salt and pepper
Instructions
- Peel and cut the potatoes into small pieces, about 1cm (1/2 in) square. Season the diced potatoes with salt and pepper
- Cook in melted butter. 200C/gas 6 in a roasting tin. cook in the oven for about 25 minutes, turning occasionally, until they are golden brown.
- Sprinkle with the chopped parsley as garnish.
