Ingredients
 

  • 1 1/2 lb potatoes
  • 1 cup butter
  • 1 tbsp parsley chopped for garnish
  • salt and pepper

Instructions

  • Peel and cut the potatoes into small pieces, about 1cm (1/2 in) square. Season the diced potatoes with salt and pepper
  • Cook in melted butter. 200C/gas 6 in a roasting tin. cook in the oven for about 25 minutes, turning occasionally, until they are golden brown.
  • Sprinkle with the chopped parsley as garnish.
