Sweet Potatoes with Cinnamon and Orange
Ingredients
- 2 lb sweet potatoes peeled
- 1 orange
- 2/3 cup dark brown sugar
- 1/2 lemon
- 1/3 cup butter
- 2 floz tepid water
- Cinnamon powder
Instructions
- Cut potatoes into about 1 cm (1/2 in) squares.
- Slice orange and lemon as thinly as possible and arrange potatoes and fruit in layers in a buttered ovenproof dish.
- Sprinkle with sugar and dab small pieces of butter all over.
- Add the water, then cover with a lid or foil and bake in the oven Gas mark 4, 350°F (180°C) for 1 hour.
- Dust the top with the cinnamon and continue baking uncovered for a further 15 minutes.
