  • 4 oz shortcrust pastry
  • 3 oz Red Leicester cheese grated
  • 1/4 pint milk or fresh single cream
  • 1 egg size 2
  • 2 tsp chopped fresh parsley
  • salt and freshly ground pepper


  • Roll out the pastry on a floured work surface and use to line twelve 5 cm (2 inch) patty tins.
  • Put the cheese into a bowl, add the milk or fresh cream, egg, parsley and seasoning. Whisk lightly together with a fork.
  • Using a spoon, divide the mixture between the patty tins. Bake in the oven at 180°C (350°F) gas mark 4 for 20 - 25 minutes.
